Called Sideritis or Sitheros in Greece, sometimes called Ironwort or Shepherd's Tea, this Mediterranean beauty may as well be a gift from Olympus. This flowering herb has long been recognized for its medicinal properties and loved for its strong aroma and flavor. 

Zero Caffeine. This herb has antimicrobial, anti-oxidant and anti-inflammatory properties, and is known to aid in digestion, lower blood pressure, improve respiratory function and even improves cognitive function and reduces stress.

Brewed at 212°F for 5-10 Minutes (depending on taste) you'll be rewarded with a golden cup with light body and big complex flavor. Earthy undertones lift up citrus, licorice, and mint.
This fragrant wonder is fantastic hot or cold, and can be used in innumerable ways in the kitchen.


Water: 212°F | Flowers: 1 tsp (1 gram) per 12 ounce cup | Infusion Time: 5-10 minutes.


Basic Steeping Tips 
- Use filtered or spring water, whenever possible 
- Remove leaves after recommended time (adjust to taste) 
- If you want stronger tea, use more leaves instead of steeping for a longer time
Leaves can be resteeped 2-3 times resulting in various flavor differences. Don't throw out those leaves until they have given it all up!
