Silver Needle (Baihao Yinzhen or "White Hair Silver Needle") is one of the most well-known white teas. Its name hints at its appearance: silvery unopened buds with fine downy hairs are plucked by hand and carefully withered and dried to remove moisture without oxidizing the leaves.
As with any tea, the leaf varietal and where it is grown are equally important to the character and flavor of the tea. To illustrate we wanted to give our customers a chance to compare two of our favorites that come from different cultivars and different environments 1400 miles apart.
Our Imperial Grade Silver Needle (What we regularly sell simply as "Silver Needle") is grown in Jinggu near the famed Lancang River in Yunnan province on China's Southwestern border where Winter temperatures are relatively mild.
The Silver Needle from Fuding is a smaller leaf varietal grown on the Eastern coast of China near the borders of Fujian and Zhejiang, where Winters can be a little colder and the minerals in the soil are very different.
Both are grown at altitudes over 1000 meters above sea level, and are processed in very similar ways, but the flavor and aromas are entirely different.
