Anji Bai Cha
Picked in early Spring in Zhejiang province, this "bai cha" or white tea is actually green. It is harvested early in the season when its leaves are still pale. Low astringency, substantial mouthfeel, bold umami, light sweetness, and a rich vegetal with flavor notes ranging from asparagus to citrus.
These leaves reminiscent of pine needles hold up well to multiple steeps.
